Quinoa-infused Ground Beef, Red Cabbage and Squash Mix

Prepare quinoa according to package directions but substitute 1tsp. of beef or chicken stock for salt.

Cut red cabbage into 1-1/2 inch cubes.
Slice squash.
Add chopped onion and garlic.
Stir-fry with avocado or other high temperature oil until cabbage becomes tender.
